Happy Mother’s Day to all the moms out there! I hope you are enjoying a well-deserved day of pampering, relaxation, and love.
Mother’s Day has always been an interesting holiday for me as my mom died when I was two months old. My dad didn’t get remarried until I was 17 so growing up I was largely without a mother figure. Now that I’m older I feel so lucky to have a stepmom, a mother-in-law, and all my wonderful friends who are moms to celebrate on this special day.
My sweet friend Jordan is expecting her first baby and I’m so excited to celebrate with her. This picture is from a Cold Stone date we went on last week after work. 😀 I love that it’s finally ice cream weather!
She’s having a little get-together with close friends today and I love that it gives me something to celebrate and look forward to this Mother’s Day. To help add to the festivities I picked up this Strawberry Splendor cake from Cold Stone for her Mother’s Day party. Nothing says a party like an ice cream cake!
Growing up, getting Cold Stone was always such a treat for me. I’m excited to now get to share that treat with others!
The Strawberry Splendor cake is made of yellow cake and sweet cream ice cream ( <— LOVE!) layered with fresh strawberry puree wrapped in white frosting and a strawberry glaze. It’s heavenly and perfect for both Mother’s Day celebrations and everyday enjoyment!
My dad is coming to visit me next week so I actually picked up another small Strawberry Splendor cake to enjoy with him when he arrives as growing up he had the role of both mom and dad. Vanilla cake and strawberry ice cream are also his favorites so this cake is perfect for him. 😀

My family always celebrates with a girly morning brunch! My three older brothers always grin and bear it, dressing up and sitting for a nice meal. I cherish those memories now that I live so far away from my mom!

My favorite ice cream flavors involve chocolate chips and nuts. Oh my. I’m drooling as I type. My mom died 30 years ago. If she were still alive, we would most certainly enjoy a Coldstone treat together. She believed in planning meals by deciding what the dessert would be first. In her words, “That way you could be sure everyone left with a great taste in their mouths.”
As a way of honoring her now, I am in church on Mother’s Day — and most every Sunday for that matter. She would be happy about that.

Vanilla is my favorite ice cream. I love being with my mom on Mother’s Day when I am able. But when I can’t, I send her her favorite coffee and we chat on the phone. She loves hearing all the chaos going on at my house with my 3 kids. It’s especially rowdy since I’m solo while my husband is deployed. ☺ I think it makes her remember the times when us kids were younger and she was in my shoes with a circus running around her all the time.
My favorite Cold Stone creation is Birthday Cake Remix! We went out to get it on my due date to see if it would inspire someone’s birthday. The next day we went to hospital 🙂
