Hey everyone! Happy Monday! I hope you had a great weekend. Like always, mine went by way too fast. My weekends are never really relaxing, but they’re always a ton of fun. Here’s what I was up to:
After work on Friday, Josh and I decided to head down to South Omaha to try Laos. Laos is a Thai restaurant that my friend Molly has been raving about. This girl knows all the good eats in Omaha so I was excited to try it out. Josh and I split veggie spring rolls and then I got chicken pad thai for my entree. It was delicious, and definitely some of the best Thai food I’ve ever had. I don’t like spicy food, so although I love love love pad thai, I totally admit it can sometimes be a little bland with such a mild flavor. Laos was able to add a lot of flavor to the dish, even without the heat.
Saturday my alarm was set for 5am. I was volunteering for my first race! I volunteered in conjunction with Junior League as part of their partnership with The Color Run.
I really wanted to throw color, but am a wuss when it comes to being outside in the summer sun for hours at a time. I’m way too pale for that. Also my one eye was inflamed and I didn’t want to get a ton of color in it. And my skin has been an itchy annoying mess for the last week and I cannot for the life of me figure out what I am allergic/intolerant to. Long story short, I ended up working the store with two other wonderful JL ladies and two awesome Color Run employees.
We had so much fun watching the Zumba party before the race, chatting with racers, and selling people lots of awesome Color Run merchandise. (They have fanny packs!!) I also got to meet fellow blogger Dreadmill Drummer who was racing with his son. He’s getting ready for his next race which is a 50k! I was seriously impressed and know he is going to rock it.
I was also really impressed by The Color Run staff. They work hard and put on a quality race. I had such a great time volunteering, but I really hope I get to run in it next year. It looks like it was a fun time.
After the race, I had to quickly get showered and changed to head to an Omaha Bloggers meeting. We met at Ragazzi’s to network and discuss social media over delicious pizza. Josh and I are still trying to scope out all the good pizza places in Omaha and this is one I need to take him to. I tried the tomato basil pizza and the artichoke chicken pizza. They both were so yummy.
Sara from Social Connections was our featured speaker. She was so nice and talked to us about how important it is to be our authentic selves when we blog.
This was the group of us. It was so nice to reconnect with some familiar faces and get to know some new ones too. Omaha Bloggers are a great bunch and it’s a group I’m so happy to be a part of. Lisa of The Walking Tourists took charge of organizing this event and did a fabulous job. The event went off with a hitch thanks to her and our sponsors: Ragazzi’s Pizza, Magnolia Hotels, Whole Foods Omaha, and Firehouse Subs.
After the blogger meeting on Saturday, Josh and I headed over to Aksarben to see a Journey tribute band! Just like the Midtown Crossing event, the place was packed!
We went with our good friends and like always, drank too much, ate too much, and had so so so much fun. The cover band wasn’t the best, but I still rocked out to Don’t Stop Believing.
Sunday I slept in until 9 and felt like a new person. After that, I decided to sweat off some of the previous night with a Zumba class. I usually walk into class right as it’s starting, but this time I was 10 minutes early (And since I didn’t know what to do with myself I decided to take a picture). It’s amazing what a difference 10 minutes can make. The room goes from empty like this to absolutely packed. It was a fun class and one that left me absolutely drenched in sweat.
The rest of the day was spent running errands and watching endless Chuck episodes. It was the perfect way to end the weekend.
Question of the Day: What was the highlight of your weekend?
Lisa Trudell says
Erin, you are always getting in the most of your weekends and that is awesome! So glad to see you Saturday at the bloggers social media event. Too bad to hear that the Journey cover band was not that great. Looks like you made the most of it anyway with friends. Glad we chose to show Sara the Old Market instead then 🙂
Have a fantastic week!
Erin says
Thanks Lisa! It was so great to see you too! I hope you and Sara had a fun time exploring Old Market. I love it there.

Looks like such an awesome weekend! You look HAPPY!
Highlight for me was walking in the mountains with my dogs and finding a local coffee shop that has fresh juice and the BEST muffins!
Erin says
I love finding new coffee shops! And fresh juice is my favorite!

Looks like a fun and SUPER busy weekend!! Did Josh find any vegetarian entrees at the Thai restaurant?
Erin says
He found a bunch! Almost anything at a Thai restaurant is available vegetarian. They offer any of their entrees with either veggies or tofu as the meat option. Thai places seem to lean one way or another with either offering fried tofu or soft tofu as their tofu option. When a place offers soft tofu I almost always get tofu pad thai. But this place did fried tofu (Josh’s favorite) so I went with chicken and he got that. We’re big Thai fans. Our first date was actually at a Thai place! 😀
Hannah @ CleanEatingVeggieGirl says
Ahh, nice!! We will have to go sometime. I like both kinds of tofu… but not gonna lie, I think almost anything fried tastes amazing 😉
Erin says
Anytime you want I’m down! Josh actually went back the next day with Molly and Erin while I was at the social media event. haha It’s that good!
Hannah @ CleanEatingVeggieGirl says
Oh geez… that has to be a good sign then!!
Maureen says
I LOVE fun-filled weekends! Especially if I can sleep in after a late night out. 🙂
Erin says
Yes! Sleeping in afterwards is the best!
Rebecca Jo says
I didn’t even think about volunteering for the Color Run! I need to do that if I can’t run again next year!!!
Erin says
You definitely should! It’s a lot of fun. 🙂
Brie @ Lean, Clean, & Brie says
1) The pad thai and spring rolls looks amazing, 2) I love your pictures from volunteering at the Color Run- such a fun race!, and 3) It looks like you had a busy, but fun weekend!!
Erin says
It was a very fun weekend! And oh man I want to eat that pad thai and some spring rolls all over again! SO good!
Linda @ Fit Fed and Happy says
My biggest pet peeve about the colour run is that you inhale the chemicals. Isn’t that terrible?!
Erin says
I’ve run color races before and find them to be completely safe. There’s not anything harmful in the color, it’s just corn starch. But that being said everyone needs to 100% make their own decisions and choices that they feel comfortable with.
janelle says
Always love your posts! Thanks for sharing and it was great seeing you again on Saturday!
Erin says
It was so great to see you! I’m so glad you’re liking the food processor! 😀
Haley @ Running with Diapers says
Looks like you had a very fun filled weekend. I didn’t do anything special. Just lounged around the house with my family and took it easy. The Color Run is coming back to Tampa/Clearwater later this year and I want to do it. I’ve heard so many great things about them, but never participated. Maybe I can volunteer at the very least.
Erin says
I had a blast volunteering! It was so great getting to chat with the runners and hear about their excitement.
Laura @ Sprint 2 the Table says
That all looks like a blast! I’m a huge Journey fan. It’s almost better when you can laugh t the cover band. 😉
Erin says
Yes! It was such a fun time.
