Three Cooks One Kitchen: Spice-rubbed Salmon

It’s time for January’s Three Cooks One Kitchen!

In case you aren’t familiar Three Cooks One Kitchen is a monthly cooking installment Joanna, Hannah and I do. We pick one of our places to get together and a food theme we want to focus on. This month was at my apartment and involved fish!

Recently Hannah wrote about how she is starting to incorporate fish into her diet. I am all about everyone  doing what is right for their body and Joanna and I were excited to support her by having a fish night.

Few things are more fishy than salmon! I picked up this responsibly farmed salmon from Whole Foods. Because of the migratory patterns of salmon there are not any fresh wild salmon available in my area so I figured this was the next best thing.

Hannah found this taco spice rubbed salmon recipe for us to try. We all thought it sounded great and it was delicious! Just be prepared to have a whole bunch of extra spice rub if you use this recipe. We even cut it down for three people and still had 3/4 of the rub left.

I was always told to leave the skin on salmon when you cook it so the fat in the layer right underneath cooks down into the meat. While I am all about extra Omega-3’s I totally agree with Hannah and Joanna that it looks creepy! haha

None of us our comfortable with the timing of how long to cook fish so we decided to be cautious and overcook the crap out of it. (We cooked ours for ~35 minutes.) Everyone says fish gets really dry if overcooked but I’ve never experienced that. These came out super moist. Maybe that means we’re not really over-cooking the fish but just cooking it as long as it’s actually supposed to be cooked?

To be honest, I feel like Hannah made this entire meal while we all talked. Joanna read off the recipe instructions, and I was happy to help make this zucchini with tomatoes and corn side dish. Here I am using a knife that’s way too big to mince garlic.

And our delicious meal! (This is actually Hannah’s picture. I didn’t manage to pull out my big camera the entire night. Whoops!) I don’t think I’ll ever be a person who craves fish but it’s so good for you, and this was a really good meal. I mixed pieces of salmon into the corn side dish and thought it tasted great that way.

    Wow, that looks SO good! I am a huge salmon fan so I will definitely have to be making that soon! I also love that you three get together to cook. Sounds like such a fun night and you get a delicious meal out of it!

    Isn’t it so funny to write about how none of us really knew what the heck we were doing?? 😉 It turned out really good, though, so maybe we know more than we think?

    I cannot deal with the skin on salmon. It totally grosses me out. Which is probably why I always order salmon out at restaurants, but never cook it at home : )
