Happy Friday everyone! Who’s excited for the weekend? I’m going to pet some alpacas tomorrow and I cannot wait! Here’s what else I’m loving this week:
1. Rock Bottom invited me and Josh to their Old Market location this week to try out some of their new menu items. I had never been to a Rock Bottom before and ohmygoodness you guys, this food is good! Josh was a happy camper with his Rocktoberfest beer and declared Rock Bottom’s homemade veggie burger one of the best veggie burgers he’s ever had. I loved their mac and cheese and carrot cake.
The absolute star of the show for me was their street foods latin salsa stack appetizer. It’s avocado, red bell peppers, black beans, roasted corn, chipotle peppers, and cilantro topped with housemade pico de gallo. During our meal the general manager, Mike, come over and after hearing me rave about the latin salsa stack, told me it is only $2 during happy hour. Say what? I asked to see a happy hour menu and after a quick browse told Josh we have found our new happy hour place. These deals are unreal! And the best part is they’re available at all Rock Bottoms nationwide!
2. This AdAge video was posted in the Omaha Bloggers Group this week and I love how it explains the value of influencer marketing so concisely and simply!
3. How adorable is this business card holder? My friend Molly got it for me for my birthday and I love it so much! It goes perfectly with my new business cards.
4. Calling all Qdoba fans in Omaha: we just got our FIFTH Qdoba restaurant and it’s like five minutes from me at the intersection of Saddle Creek and Dodge. I was invited to one of their soft openings and went to town on their queso, chicken gumbo, guacamole, and chicken tacos. It has been a while since I’ve been to a Qdoba and I forgot how good they are. Josh and I have many more queso and guac dates in our future. 😀
5. Did you hear about the guy who travelled across the US by train for only $213? Josh has always dreamed of a cross-country train travel vacation and I always put the kibosh on the idea because it seemed like a whole lot of sitting and not a whole lot of doing. Well I just read this article and it totally made me rethink a cross-country train vacation. It looks like an amazing way to see a lot of the country without spending a ton of money. It won’t be a surprise to Josh when he reads this but I may or may not be looking into something like this for our big 2016 vacation. 😉

Love the idea of traveling by train cross country. Sounds so romantic. Probably more romantic in my head than it actually is. Gotta hear more about the alpacas 🙂
Totally jealous of you getting to pet alpacas! I love Llama! I am 3 hours from Omaha so I need to check out Qdoba there! We take trips to Omaha often – love it there – GREAT zoo! Seriously I do not like Zoos much but they have a great aquarium and rain forrest!

I love how you see the positives in your week and sum them all up. What a great idea. Train travel has never been a priority for me. I think you miss so much when you are asleep. But then again it might also take you through country you wouldn’t otherwise get to. Could be a fun trip.
I live in Canada so, I don’t think we have that restaurant up here. It looks delicious though!

I highly recommend a cross country road trip. Before my husband began his first professional job, we decided to take a month long road trip together. We made sure to contact friends and family all over the country. We have now been to 25 states together in less than 5 years of marriage and are planning more trips in the future. It has honestly been so rewarding! I hope you can do it!! 🙂
