Did anyone else get a lot of snow this weekend? State College received about six inches, making it our first real snowfall of the season! Because of this and Josh being under the weather we laid low this weekend and, aside from making food runs to Wegmans, stayed indoors.
I know I’ve talked about them a lot on here but Wegmans $6 dinners are pretty amazing. Meal number one included eggplant roulettes, sesame kale and spinach squash.
Since Josh was fighting off a cold I tried to make foods that were easy on the stomach yet chock full of nutrients. Old fashioned oats seemed to be a good choice.
I got to introduce Josh to the wonderfulness that is Wegman’s farro with roasted red peppers and mushrooms. I could eat this all day every day. Their tomato soup was also absolutely delicious.
Oats mixed with Chobani Apple Cinnamon sprinkled with extra cinnamon was a breakfast staple. I was so excited to get to share this with Josh and get his opinions on the new flavor. Verdict: He loves it!
Josh also introduced me to Wegman’s lentil soup, which is so incredible, as well as their Indian spiced cauliflower. Both were delicious!
After lots of naps and all day HGTV marathons Josh started to feel a lot better and I was so relieved. I don’t like him being sick! Even though it was a sickly weekend it was still a really fun one. Sometimes your body just needs to rest and relax and not do much of anything for a few days.
I’m so glad I got to relax over the weekend because today I came home to an unexpected car problem. Thankfully its fixable, its just never fun to have something unexpectedly go wrong.
