Hey guys! Happy Monday! I hope your weekend treated you well and that your day is off to a good start. Josh and I had such a fun weekend. It was filled with catching up on work, working out (which I love doing as a couple!), hanging out with friends, and as always, tons of good food.
I got to Josh’s late on Friday and did Blogilate’s Gangnam Style workout right when I got there and oh man it kicked my butt! If you’re looking for a fun workout to do that you really feel I definitely recommend it. I repeated the workout five times and felt like it was the perfect length for me.
After the workout left me dripping in sweat I devoured a Chipotle burrito bowl. It was so tasty! 😀
After dinner Josh and I were changing into PJs and getting ready for a night of lounging on the couch when we got a phone call from Lily and Pierce. They said they made too much food for the night and wanted to know if we wanted to come over and help eat it. Twist our arms, eh? 😀 Josh whipped up some hot toddies and we had a blast hanging out, munching on some seven layer dip, and cupcake brownies. It was a really fun night!
The next morning Josh and I woke up early to head to the YMCA to get a run in. We ran for 45 minutes and it was so nice getting to run together as a couple. Josh is so encouraging and such a great running buddy. And bonus, I think I’m ready to up my running speed a little! We’ll see how that goes on Tuesday.
After the gym we were starving so we headed over to Wegmans to get some lunch. We are huge fans of their $6 meals and love how they let you sub a main dish for two extra side dishes. They just switched over to their fall sides and they are the best. I got the farro, escarole, brussel sprouts, and risotto. They were all soo good. I really hope wherever Josh and I end up living has a Wegmans because they are by far our favorite grocery store.
Saturday night Josh and I met up with friends for dinner at Champs. It was Penn State’s second home game and it was AWESOME getting to see them win on the big screen. Sorry Navy, but State College really needed that win. Josh and I also apparently really needed some food because this huge pizza was for the two of us! haha We had no idea it was going to be so big, we only ended up eating half and took the rest home for Sunday’s lunch. The pizza was delicious, and it was so much fun getting to hang out with everyone.
After dinner Josh and I were somehow still feeling a little snack-ish so we headed over to Ruby Tuesdays for a blondie for two a la mode. It was so tasty and the perfect way to cap off a great Saturday.
Sunday was spent working on school stuff and eating leftover pizza. Before dinner, Josh and I did Pilates together and then headed over to Fiddlehead for a healthy dinner.
I got a spinach salad with pears, quinoa, pecans, and dried cranberries topped off with a raspberry vinaigrette. It was delicious and so filling.
And then we headed home to catch up on HGTV and get ready for the upcoming week. My 22nd Birthday is September 19–only three more days!
Question of the Day: What was the highlight of your weekend? Did you eat any delicious food?
Christine @ Love, Life, Surf says
It looks like you had a great food weekend! I was on a bit of a baking spree Sunday. I haven’t baked in quite a while and felt the urge. It was great to be back in the kitchen creating things. I think that my husband was pleasantly surprise too!
Erin says
Aww that’s so sweet! I love baking, and Josh always really appreciates it too! ;p With fall just around the corner I’m definitely getting the urge to whip up something tasty and hearty.
Debbie @ Live from La Auinta says
I love Chipotle’s veggie bowls! I just wish they’d cook their onions and peppers separately because I love onions and hate peppers!
All your food looks great. My best food this weekend was a vegan date, almond, chocolate, coconut bite that one of my cross country runner’s parent made (she’s a baker). Talk about sinful!
Erin says
Ohh that sounds amazing! How sweet of a your runner’s parent to bring that in!
I never even thought about that at Chipotle, you should request it sometime!
