Three Cooks One Kitchen: Onion and Pepper Frittata

It’s time for June’s Three Cooks One Kitchen! (We took a little hiatus in May because Joanna had her baby! 😀 )

In case you aren’t familiar, Three Cooks One Kitchen is a monthly cooking installment Joanna, Hannah and I do. We pick one of our places to get together and a food theme we want to focus on. This month was at Joanna’s house and the focus was on breakfast!

When deciding what kind of breakfast dish we wanted to make, Hannah shared Brittany’s caramelized onion and red bell pepper frittata post and it was pretty instantly decided. The recipe was shared from the new Everyday Detox book and it looked pretty fabulous.

So last Sunday, bright and early, we all got together and got cooking! It was so fun to catch up, girl talk, and coo at a cute little newborn and adorable toddler.

This outfit look familiar? I wore it on Sunday and decided I’d photograph it as my outfit for the week. But then I got home Sunday after a JLO meeting, grocery shopping, and doing chores and decided to nap instead. Since my outfit was all wrinkled, I threw it in the wash and hung it up to dry so I could photograph it Monday after work. Then since I only wore it for a few minutes Monday after work, I decided to wear it to work on Tuesday. And that is the saga of how I wore this outfit three times in one week! 😀

Our finished dish! It was so delicious we ate the whole thing. (And all agreed the goat cheese was the best part! haha) I loved how quick and easy it was to make such a healthy dish! Now if only I can get my husband to like eggs… 😉

    I love eggs and this looks so great! I love putting mushrooms and bacon in mine, topped with lots of cheese! I love this series 🙂

    I absolutely love eggs. I eat them for at least one meal a day – usually dinner because they’re quick and easy! I’ve never made a frittata but I love ones with asparagus, broccoli and very very little cheese : )

    I love how versatile eggs can be, I mean they are used in sooo many dishes.
    Really liked the frittata, I haven’t had any for a long time. The closest I usually come to this at
    breakfast is an omelette lol.

    Strawberries with frittata sound lush; usually have toast with it but I’ll have to try some fruit instead.
