I love peanuts. Growing up we always had a jar of peanut butter in the house. It was a quick and easy go-to that was perfect for my single-parent dad. He could add some nutrition to our meals and get us out the door in time for school in the morning. He also is responsible for my love of trail mix. He would always have a bag of it in the house and would get mad when someone (cough *me* cough) picked out the peanuts and M&Ms and left a bunch of raisins. No offense to raisins, but they are the bottom of the trail mix food chain.
Now that I’m older I know peanuts don’t just taste good, but are a great source of protein, fiber, heart-healthy fats, and are an excellent source of niacin and manganese. They’re also versatile! You can do a lot more with peanuts than make a peanut butter and jelly sandwich!
If you’re a peanut fan you will love this Thai Peanut Veggie Noodle Recipe. It’s healthy, filling, and incredible tasty!
Thai Peanut Veggie Noodle Recipe

- Set the Daikon aside
- Bring a large pot of water to a boil

- Pour the peanut sauce over the “noodles” and stir thoroughly until completely combined
- Add the cilantro and green onions, stirring until evenly distributed

- Continue cooking over medium heat for approximately five minutes

My dad always had a big bag of peanuts in the shell in the pantry. He loves them. I am a big fan of peanut butter and all credit goes to him. This recipe looks so good! I’m definitely saving it to try sometime soon. We have been talking about getting a spiralizer. I love how many different types of “pasta” you can make with them!

Erin this looks DELISH. I pinned it for later. My fav way to eat peanuts is in the form of peanut butter right off the spoon or on a banana. I’m actually about to do it right now for my morning snack. 🙂

I’m so jealous! Every time I use my spiralizer, my “noodles” get clumpy. You’ll have to show me your secrets.
Molly says
You should totally have a Thai-themed party and make this (and invite me).

I love the idea of using veggie noodles for this dish! I love thai food but the noodle dishes can be so heavy that I try to avoid them, this is the perfect alternative!
