Weekends always fly by way too fast. This one was another super fun one! Fall is in full swing around here and I so enjoyed getting to soak it in with Josh. We went on our first couples run around State College to take in the beautiful sights and it was such a great time. It was Josh’s first time running outside and he was amazing. He was in front of me for the whole run and it really gave me motivation to run faster. It was so much fun getting to cheer each other one. I’m so glad he liked running outside for the first time just as much as I did (and still do!). Outside running is definitely here to stay! 😀 We also ran some errands this weekend and went with friends to a local bar’s 40th anniversary celebration. Along with homework and lounging our days were never short things to do. And like always, our weekend featured a lot of great food. Here’s some of it:
Who says you can’t enjoy a good cheese steak as a vegetarian? This veggie version one was stuffed to the brim with mushrooms and cheese and was so delicious! We went to trivia night at Zenos with a group of friends and came in fourth! Team Mark Twain’s mustache for the win!
There were some awesome belly dancers afterwards. I want one of their swishy skirts.
Chipotle veggie bowls seem to be a weekend staple for me. They’re just so good I find myself craving them all the time.
One of Josh’s friends was in town for the weekend so a group of us headed to Ottos for dinner. Ottos is amazing, as evidenced by the fact they don’t take reservations and the line is always out the door. I’m normally not a bread basket eater at restaurants but after 45 minutes of waiting my stomach was growling and the bread was freshly baked and the butter was made in house. It was delicious.
My homemade walnut veggie burger with sweet potato fries were even better. The burger had avocado and muenster cheese on it and was out of this world. I made up for my bread basket indulgences by eating the burger without the bun. I didn’t even miss it.
I was craving some greens this weekend so I stopped at Fiddlehead for a spinach salad with quinoa, pear, feta, and walnuts. It was all topped with an apple cider vinaigrette and was so good.
After our run Josh made us fruit smoothies. I added some oatmeal to mine and it was so good. Definitely some well deserved refueling after a good run.
I also made myself a grilled cheese sandwich. 😀 I was craving one!
Josh is amazing in the kitchen and helped me create some of my favorite holiday side dishes for a post I’m working on due to be published next month. If you’re a fan of Pumpkin Rice Pudding and Smashed Greek Potatoes with Chives definitely stop back here on November 5th! 😀

Congrats on your first couple’s run! I love running with my husband, although he’s a lot faster than me and struggles to run at my slower pace. It’s definitely motivating, though.
This weekend, I had some pumpkin soup at a fall-themed CrossFit event that my husband was competing in. It definitely put me in the fall spirit.

Now I am going to have to get a Chipotle bowl soon. That veggie “cheesesteak” is a great idea too. Food highlights- made my favorite gingerbread this weekend- other than that just cooked at home to save some $. 🙂

I love the abundance of pumpkin this time of year! Even though I’m in Hawaii, I still miss Fall season. I made a pumpkin porridge with almond butter, raisins, and a few walnuts. It was delish!

I was on a major baking kick this weekend. Cookie protein balls, apple butter and healthy pumpkin doughnuts. I think the weather is getting me into hibernation mode!

sounds like a fun filled weekend. hubby made one of my favorite meals last night – shrimp pasta – so that would be the food highlight of my weekend. i am not a huge pumpkin fan – except when used for decorations.

chipotle is awesome! the freshest out of most fast food options! I obviously am obsessed with pumpkin! I have at least 1-2 pumpkiny foods a day in the fall!

I love couple’s runs! My boyfriend is just getting into running and we have gone on a couple runs together and he even told me this weekend that he is thinking about signing up for a 5k with me next year! Exciting!
I’ve never thought of adding oatmeal to a smoothie..how’d you do it? Ground oats?

And as for the oats I took a scoop of the old fashioned oats uncooked and put them in the smoothie. It blended right in, I couldn’t even taste it!
