Hello from Nashville! Today has been a whirlwind of a day and I am going to fall fast asleep as soon as my head hits the pillow. Before that happens though, I want to share a recipe that was a big hit at Friendsgiving last weekend. Pumpkin mookies are a holiday tradition in my house. I was so excited for the chance to share the mookie goodness with others. I was especially excited for the opportunity to make them a healthier treat this holiday season.
I was recently selected to take the #switch2swerve challenge. It is a challenge where 10 bloggers will use Swerve instead of sugar for 30 days. We will share our honest feedback on the product and share some recipes along the way! If you’re wondering what the heck Swerve is:
Combine pumpkin, Swerve, applesauce, and egg.
I love that Swerve is a one for one replacement with sugar. It makes baking so easy!
In a separate bowl, stir together flour, baking powder, spices, and salt.
Dissolve the baking soda with milk in a separate dish and then stir it into the bowl containing the flour. Once those are mixed combine the flour bowl with the pumpkin bowl and mix thoroughly, adding chocolate chips as you mix.
An ice cream scoop or a spoon are great ways to scoop out the right size mookie. Make sure your cookie sheet is greased!
Josh did one sheet while I did the other. After 12 minutes in the oven they’re all good to go! Easy peasy.
Don’t these look delicious? The best part, they taste exactly like mookies made with real sugar. Josh was skeptical about cooking with a sugar replacement at first, but he ate four mookies in the span of ten minutes when they were cooling and proclaimed them to be identical. They don’t taste like you’re sacrificing flavor in any way.
We ate while they cooled and packed the rest up for Joanna and Jeff’s party. I’m having a lot of fun experimenting with plating things for pictures. 😀
As much as I loved baking with Swerve and how these mookies turned out, there is one weird thing I have to mention.
This a picture of leftover mookies we brought to Joanna’s house after they were sitting out after the party for a while. (This picture is stolen from Joanna’s Instagram.) They began to turn white and dry on the outside and lose their orange color. Joanna tasted them and said they still tasted delicious but Josh is guessing Swerve had a chemical reaction with the other mookie ingredients and air which was causing the mookies to dry out over time. This shocked me as I’ve never seen food change like that before, and I cooked with pumpkin and applesauce, which are two of the moistest ingredients you can bake with. We need to make sure we wrap them up next time or I eat them all quicker! haha
Questions of the Day: Do you have any idea what would cause the mookie reaction seen in the last picture? I’m bummed but at the same time consider it a minor trade off for getting to eat delicious cookies that are sugar free and aren’t loaded with crap! Have you ever tried a sugar replacement? Would you try Swerve?

Mookies – what a funny word, I LOVE IT! 😉 And that’s soooo weird what the Swerve did. I have a recipe that calls for it (I have to find it)… And we shall see what happens!
