Pineapple Cucumber Delight

I drank a lot of fresh juice when I was in Hawaii. When I finally get around to recapping all the food (I’m shooting for next week), I plan on talking about all the fresh produce Hawaii has. If you don’t mind me geek-ing out geographically for a minute: Hawaii is made up of volcanic soil. Volcanic soil is the most fertile soil on Earth. Fertile soil = lots of yummy, delicious foods.

Since I’ve been home I’ve been on a serious juice kick. Thanks to the amazingness that is the Magimix food processor/juicer combo I’ve been able to recreate some of my favorite juices from Hawaii.

When Josh and I went to Mexico we ate a ton of guacamole. When we went to Hawaii we ate a ton of pineapple. Every day. It was on my pancakes, in my drinks, and even in my cookies. (I have a serious Honolulu Cookie Company obsession.) Naturally, I started craving more pineapple after a few days without it once I was back in the Midwest. I knew it had to be a key ingredient in a juice I made.

I call my creation the Pineapple Cucumber Delight. The pineapple gives it sweetness, the cucumber adds coolness, the mint makes it refreshing, and the ginger adds zing. It is a perfectly proportioned recipe with none of the notes overpowering the other. I plan on making this many, many more times this summer. It’s one of the best juices I’ve ever had.

Pineapple Cucumber Delight
  • 1 pineapple
  • 2 medium cucumbers
  • 1 cup fresh mint leaves (packed)
  • 1 oz fresh ginger, peeled
Core pineapple and cut into chunks
Peel cucumbers and cut into long chunks
In order, add pineapple, cucumber, mint, and ginger to the juicer
Transfer juice to an airtight container and refrigerate overnight
Shake or stir thoroughly before drinking.

Is it weird to find juicing fun? I love this machine.

The result was sweet and crisp and oh so refreshing. It took me right back to when I was eating pineapple tacos on the beach in Hawaii with my toes in the sand and the sun in my hair. If only a juice could come with a beach and a palm tree. 😀

    That sounds delish! Thanks for the recipe! I love pineapples, only juice occasionally (feeling sick or need to use up produce) and…last vacation? Uh…haha! I guess we tasted wine and cheese when we went to Idyllwild!

    OH my gosh, YES! Hawaii = best place for juice/produce.

    I remember last summer I was there, EVERYTHING at the grocery store was so ridiculously expensive. But the DOLE Products were so affordable, so we basically lived off wine + juice. 🙂

    I love pineapples! I still have two of them that I need to cut up! lol. This juice recipe sounds so refreshing. I like how you included mint! I’ve been really loving mint leaves lately!
