Happy Wednesday! I hope your Tuesday was wonderful. I did not get nearly as much cleaning done as I wanted but I did order a new camera. I also got my car’s oil changed, and $180 later it has a new motor pad or something else that doesn’t really do anything or matter but costs a lot of money. I also rocked it out at Zumba and made a delicious salmon dinner afterwards. I finally found my favorite way (so far) to enjoy salmon. It’s really tasty, so I thought I would share it with you.
Living on the East Coast there is unfortunately not a lot of fresh wild salmon available. Did you know any salmon with the word Atlantic in the label is farm raised? I’ve been doing a lot of research on the safety of fish and was shocked to find how unsafe farm raised salmon is. Did you know the EPA recommends eating no more than one serving a month of farm raised salmon because of the cancer causing risks associated with it? They’re so nutrient deprived that most farm raised salmon has to be injected with a pink color to make it look like what we’ve come to expect from salmon.
The only salmon I’ve tried so far is Wegman’s frozen wild sock eye salmon. From what I read sock eye is one of the healthiest forms of salmon available. This salmon is expensive, but I figure my health is worth it.
There’s two salmon per package and they both come in individually wrapped packs. Whenever I look at the salmon at this point it always reminds me of a frozen fish pop. Do those even exist?
Maybe it’s because I’m Irish, but I love to steam foods. It’s quick, easy on the stomach, and the calories. Because I’m too lazy to defrost the salmon I steam it for 15 minutes all by itself. After 15 minutes I place the other veggies I’m eating with it in the steamer to cook and any toppings I have for the salmon. My go-to right now is topping the salmon with pesto and cooked garlic cloves with a side of brussels sprouts. I let everything steam for another 15 minutes and then it’s dinner time.
A half an hour of very little labor yields one amazing dinner. It is healthy, it is filling, and it is tasty. I don’t know what it is about the pesto and garlic but the flavors work perfectly with the salmon. If you’re looking for some new ways to try salmon I definitely recommend this one!
