I am always forgetting things at Josh’s. I’ve left a fondue maker, a formal dress, and just this past weekend I forgot my earrings.
Imagine my surprise when I got home and saw I had a little box waiting for me.

After getting home from finance class and online window shopping at Sheyna I decided to make a quick lunch before starting on some homework I had to do. Is it Winter Break yet?
I toasted a multi-grain English muffin and then slathered it with almond butter and Tait Farm’s Apple Pepper Jelly that I picked up this weekend. I’m surprised at how much I love the jelly since I normally can’t handle spicy foods and this one definitely packs a kick. Its so good!
After working on schoolwork for a while I started to get hungry and decided to make some pasta for dinner. Diane just picked up some quinoa elbows from our local health food store for herself since she’s gluten, soy, and dairy intolerant. I love quinoa and the natural protein they offer so I was really excited to try them. Unfortunately they won’t be a common occurrence since that little bag was $5.50 and I can handle gluten. Since it was going to be a treat I decided to break open the vodka sauce from Mario and Luigis I just picked up.
While a half cup of quinoa elbows was cooking away I chopped up a yellow onion and mixed them with some vodka sauce. I eyeballed how much sauce seemed necessary (about a half a cup) and then started heating it on a low temperature and stirring occasionally.
After about ten minutes the noodles were done so I drained them and then mixed them in with the sauce and yellow pepper.
I mixed everything together and added a handful of mozzarella cheese before removing from heat and serving.
This was one of the easiest dinners to make with a taste so good no one would believe it. It was creamy and cheesy and so so flavorful! I love how the quinoa elbows taste and how filling they are. This meal was out of this world!
