Hey everyone! Long time no see! I’ve been on a little bit of an unexpected break from blogging just because of how busy things got over here. I’m graduating next semester so there’s been some exciting things happening involving getting ready for after graduation. I was really excited to get a paper done I had been having the hardest time writing on Friday so that I could head to State College for the weekend without any school stresses.
Friday night Josh and I headed to Chipotle for dinner. I had never been to Chipotle before and was so excited to try it out after I’ve heard so much about it. State College has a lot of Mexican options and I was looking forward to finally trying Chipotle so I could rank my favorites.
The weather was so nice that day they opened up the doors in the restaurant and it made for such a great dining experience.
I got the veggie burrito with brown rice, black beans, veggies, pico de gallo, corn salsa, gucamole and cheese. It was absolutely stuffed to the brim and so so good. Chipotle lived up to all the hype for me.
That night Josh and I met up with some of his friends at Inferno to celebrate one of his friends defending their Masters. It was really fun to go out and listen to some good music and have fun in a big group. We also had the added bonus of running into a Crown Royal promotion and getting free tank tops and Tshirts. How adorable is this blinged out tank top? I’ll definitely be rocking it for a PJ shirt!
The next day was spent lounging inside and having a lazy day. It was wonderful. For dinner we headed over to Weiss to pick up some different things. I decided to try these Gardein tuscan breasts. I’ve never had fake chicken before so I was curious to see what it tasted like. Each “chicken” came with a packet of sauce. I thought it would be fun to add a slice of cheese on top and make a vegetarian chicken parm!
The best part about the chicken (besides it not being chicken) was that it only took four minutesto cook! It was really good and I would definitely eat it again. My favorite part of the meal would have to be the potatoes Josh made. He sauteed white onions with garlic and rosemary and then added in sliced red potatoes, paprika, salt and pepper. They were so good I couldn’t stop eating them!
Josh is such a good cook. He also made a really colorful sidesalad that was great. It had spinach, red onion, tomatoes, and red pepper. It was topped with a really good balsamic that took the salad over the top.
I had to leave State College early since I had some things to get ready for at home for this upcoming week. Something still on my list is to study for my science quiz tomorrow. So I better get to that!

Chipotle is good but Boloco is amazing a must try burrito place if your ever in Boston, you can customize your burrito with tons of unique sauces and add ins. Def not your typical burrito bar they use inspiration from asian, mexican, italian, southwestern,and southern cusines!
