O Olive Oil Summer Parfait Salad

Yesterday I mentioned how Josh and I worked on a little project on Sunday. That project was creating a summer dish to enjoy using O Olive Oil.

I have heard such great things about O Olive Oil but have never got to try them before. They were so sweet to send me Extra Virgin Clementine Olive Oil and Zinfandel Vinegar to sample. I’m a big fan of olive oil, the flavor is so good I use it for all my cooking. Does anyone else use it to line the pan while making pancakes or eggs? When I received this pair of oils in the mail I was so excited to see how they could be used in a tasty dish.

It was amazing how good these smell when you pull off the caps. An initial sampling of the clementine olive oil smelled like someone had just bottled fresh citrus and the zinfandel vinegar tasted like wine! O Olive Oil is organic and the O Zinfandel is a premium barrel-aged vinegar. I could tell from the first taste that this stuff was high quality.

Josh came up with the awesome idea of making a parfait summer salad along with a citrus dressing to accent all the flavors. This salad is jam packed with ingredients and tastes so incredibly good!

Parfait Summer Salad

Serves 4

2 bags mixed leaves

1 can mandarin oranges, drained

Half a pint of blueberries

Two handfuls of cranberries

Two handfuls of chopped shredded almonds

1 small package of honey goat cheese

Lay down a bag of spinach in your bowl and then top with half your mandarin oranges, blueberries, cranberries, almonds and goat cheese. Repeat this process again over top of the initial layer and voila, instant parfait salad!

Citrus O Olive Oil and Vinegar Dressing

Serves 4

6 ounces of O Zinfandel Vinegar

2 tablespoons O Clementine Olive Oil

1/4 teaspoon powdered ginger

1/8 teaspoon dried oregano

1 teaspoon agave nectar

Black pepper to taste

Mix and enjoy over your favorite salad! 🙂

The dressing was amazing. It complimented the citrus and the tangy cheese in the salad perfectly. Josh is so great at creating recipes off the top of his head. I really hope you try this one because it is really good!

It was the perfect fresh, healthy, delicious, filling summer meal shared with the best company. 🙂

      Thanks so much! I used to use heavy dressings like ranches but when I started making healthier decisions I switched to oil and vinegar and I love it, it actually tastes better to me now!
