Since becoming a vegetarian I have realized the importance of having staple foods you can go to when vegetarian friendly options aren’t available. I’m know in bigger cities this is much less of a problem but in Central PA there are a lot of towns where if you’re not looking for a burger or a plate of ribs you’re out of luck. When I’m hungry and need to keep up my energy food sources such as granola and nuts are vital snacks that can be easily stored in my car or purse for whenever hunger arises. I was so excited when offered the chance to review a Pennsylvania-based granola company called Nuts About Granola. I know I am!
Nuts About Granola offers over a dozen flavors of granola with different seasonal flavors available at different times of the year. They even have a gluten free option! They offer a 10 oz bag perfect for nibbling on every time you pass through the kitchen as well as a 2 oz on-the-go bag which I think is perfect for tucking into a purse if you know you have a busy day of classes or running errands ahead of you.
I was sent a sample of the Plain Jane Peanut Butter Granola, their most popular granola and the recipe that started their business. I was so excited to try this and was definitely not disappointed. The peanut butter flavor blends so perfectly with the oats and is sweet without being two sweet. The flavor balance is perfect, and the nutrition stats are right on par with what I’m looking for in a good, healthy granola.
I love topping yogurt with granola, making a parfait with granola and fresh fruit, and eating granola straight out of the container. I thought it would be a fun challenge to try and do something different and bake with granola. I wanted to see how far 2 oz of granola would get me, and found it was perfect amount to make a dessert for two. (Or one if you’re really hungry!)
I measured out 2 oz of granola and had to resist the urge to eat this whole bowl before I even started baking. It is so good.
I decided I was going to make Peanut Butter and Apricot Preserve Cobbler. If you’ve never mixed peanut butter and apricots before I highly recommend it. This recipe calls for just six ingredients and is jam packed with flavor!
Ingredients:
Yields 2 servings
2 ounces granola (or roughly 1/4 cup)
3 tablespoons all-purpose flour
1 tablespoon packed brown sugar
1/8 teaspoon ground cinnamon
2 tablespoons applesauce
1/8 cup apricot preserves
Go ahead and mix all the ingredients together except for the apricot preserves. Resist the urge to eat this straight out of the bowl. Preheat the oven to 350.
Separate your granola mixture into 75% and 25%. Pack the 75% of the granola mixture down into two greased muffin tins. Bake for 10 minutes.
Remove tin from oven and pour the apricot preserves over the baked granola mixture. Then add the leftover 25% of your granola mixture on top. Bake for an additional five minutes.
Take out of oven and set on stove to cool. These get messy as the apricot bubbles and cooks. I recommend removing them with a big spoon.
Your final product. 2 oz of granola and five additional ingredients will give you two of these.
I chose to serve mine with a side of strawberry frozen yogurt. The flavor combinations were out of this world. The cobbler was thick and hearty while still moist and gooey. The apricots and peanut butter tasted so good together and the warmth of the cobbler blended so well with the coldness of the frozen yogurt. It was also the perfect serving size. I was so happy my little baking adventure turned out to be a success and was in love with the flavorful peanut butter granola that helped tie the whole dessert together. This is definitely a dessert I want to make again in the future!
