Hey guys! Long time no see! I hope you had a wonderful Labor Day weekend! I know I did, the long weekend was fabulous. I got to spend it with my favorite guy in the world and we had the best time. It was so much fun I’ll be splitting our weekend festivities up into two posts. I hope you enjoy them!
Friday night Josh and I kicked off the holiday weekend by heading over to Pierce’s to grill up some food and hang out. I love grilled food but hardly grilled at all this summer so I was excited for the opportunity to make up for lost time.
Grilled corn is one of my favorite treats at the end of summer. I remember sitting on the porch at the shore when I was little husking ears of corn with my grandma and sister. White corn is my favorite but the yellow was so tasty.
Josh made us some incredible veggie and black bean quesadillas. First he roasted the onions and peppers and squash on the grill and then combined them with cheese and guacamole before grilling the whole thing. It was delicious. We had so much fun hanging out and enjoying a lazy Friday night.
Saturday morning we woke up early for something really exciting: I was going to my first tailgate ever! Penn State has been through a lot lately and I was so excited to get to show my support for the town and the school by cheering on the football team before the game.
We were joined at the tailgate by Nat and Micheal. Nat is one of Josh’s best friends and is going to be in our wedding! They came to visit and stayed with us for the weekend and we had SO much fun! I wish they lived closer so we could hang out more! Josh and I are really excited to visit them in NYC sometime within the next few months for a fun weekend.
At the tailgate we did some more grilling. Obviously the only thing for Josh and I on here was the pineapple.
Not to worry, Nat made an amazing veggie salad for us to share. It was delicious and refreshing on such a hot day.
Josh and I didn’t stay for the game, we opted instead to head home and watch the game in the air conditioning on the couch. Despite an amazing first half it was a sad, sad game that left me both yelling and cringing at the TV. I was so bummed Penn State didn’t win, I felt it was really needed after all the sadness and bad PR to pep up everyone’s spirits. But Ohio played an amazing game and I’m really happy for them. We’ll win the next one!
For dinner a big group of us got together at Cozy Thai for some seriously delicious Thai food. How cute is this place?

After dinner Nat, Micheal, Josh, and I decided to head on over to Adam’s Apple to get some drinks. The town was swarmed with people going out and Nat thought that we’d probably face less of a crowd there. I’m so glad we went to Adam’s Apple. The staff was so nice, there was no cover, it wasn’t crowded, and the drinks were awesome.
Meet the forbidden fruit. It’s one of my top 5 best drinks ever and it was on special for $5! I do not know alcohol so when we got there I went up to the bartender and asked for something sweet and something cheap. Mission accomplished. We all sat around and talked and got to watch the story of two forty-something’s reliving their youth unfold before our very eyes. ;p It was an awesome night.
And the weekend wasn’t over yet! But this post is because I have to be at work early tomorrow morning and need to get some sleep!

I LOVE TAILGATING!!!! I have such fond memories of tailgating with my sorority sisters and Chris’ lacrosse team in college …. sigh, the good ‘ole days 😉

That drink looks delicious! When veggie and tailgating – I’ve learned to bring a few of my own fave foods. Just in case it isn’t veg friendly. And in most cases, tailgating is all about meat and beer. haha. I love tailgating! Such a fun time with friends.

The drink was so good! It was sours and champagne and orange juice and tequila. Josh promised he’d recreate it for me! 😀 And packing my own food for tailgating is something I’ll definitely do next time, it was a very meat oriented crowd.

hahaha yeah it was a lot of fun. If it didn’t start at 10:30am we might have gotten a little crazier but as it was I was more hungry for food than anything else. Watching all the other people who didn’t really care about the time of day was hysterical though! ;p

I love college towns! I’m really excited that since Josh wants to be a professor I’ll very likely always get to be near one! Tailgating was the best, it was so much fun! I’m so glad you got to visit home this weekend, I hope you had a wonderful time!

I am a Penn State grad and was so excited to find your blog! My husband is a Penn Stater too and we were super involved at school and we miss State College so much. Where is Cozy Thai located?! And that drink is called a Sin from the Adam’s Apple 🙂 They are delicious and will sneak up on you! If you like Long Island Iced Tea’s, grab one at Cafe 210.

Yay! I’m so glad you found me, I’m always looking to connect with more PSU people! Josh and I are already mourning the loss of State College and we don’t move until next year. It is seriously the perfect town, I don’t know how we’ll ever find something like it. Cozy Thai is in the same area as the Subway by the Cafe 210 area of town, it’s off on a little side street. I LOVE Cafe 210, but I’ve never had a long island ice tea there, I do love their $3 Sunday margaritas though! Those things are dangerous!

Oh awesome! I love marketing so I’m always up for talking about it! haha Are you currently employed in a marketing job? I almost feel like I have to go get my mba asap to be able to find something I really want to do in marketing, I’m so nervous I won’t find a job when I graduate.
