Happy Thursday everyone! Its almost the weekend! Anyone got anything exciting planned? I’ve got a few things planned I can’t wait to share with you. In the meantime, I started my day by dropping my car off to get the oil changed. After that I had a quiz in finance (which I was so relived to have done well on!) and then I headed to aerobics for our fitness evaluations. We took one at the beginning of the semester and then took the one today to track our progress. I was so happy to find out I’ve lost 4.5 pounds and 1% of my body fat. Its not much but for not making an effort to lose weight it felt really good! 😀
My dad picked me up from school since my car was still at the shop. When I got home I had a bowl of multi-grain cheerios with blackberries for lunch.
Along with a piece of wheat bread toasted with almond butter, apple pepper jelly, and a half of a banana. It was great.
After going to pick up my car, which was good to go without any problems, I came home and decided to use a tool I’ve never used before to help make dinner.
A food processor! I had way too much fun using this. I ground up a can of chickpeas to add to some pasta to make it a little heartier, healthier, and give it a protein boost.
I used these Barilla pasta elbows that I love for even more protein. One serving has 17 grams! I really try and make a conscious effort to make sure I’m always getting enough protein now that I’m not eating meat.
I sauteed the chickpeas and a cut up red pepper for a few minutes while the pasta boiled.
And then added the noodles and some of my favorite vodka sauce and a few handfuls of cheddar cheese.
It was so delicious and filling and hearty. I will definitely be making this again!
Sorry if this post seems rushed, I have been super distracted tonight. I’m going to the midnight showing of Breaking Dawn with my friend Grace! So excited to see Bella and Edward’s wedding!
And speaking of weddings, I just found out one of my best friends, Summer, just got engaged to her boyfriend Sean! I am so excited for them!! She was featured on my blog when Josh and I went to visit them in the Poconos this past summer. They are such an adorable couple and I am so happy for them!
Question of the Day: Are you a Twilight fan? Any plans to see this movie? Its supposed to be great!

Mmm, I love the idea of a chickpea “paste” to add some heft to noodles. Not a twilight fan, sorry 🙂

It was really good! It didn’t really change the flavor, just the consistency and packed in so many extra nutrients. I loved it.
And Twilight isn’t for everyone, I totally understand! ;p

Can you imagine what life was like before the invention of a food processor? Food processor, blender, any way you can dice it… it’s such a time saver!
