Guacamole Grilled Cheese

Have I mentioned how I’m currently on a crazy avocado kick? I’ve been finding a way to put them on something every day. Yesterday that thing was Guacamole Grilled Cheese.

It is so good, so fresh, and so easy to make!

Guacamole
(This makes more than you’ll need for a sandwich, but I’m sure you’ll find something to do with the leftovers. :D)

3 avocados

1 clove garlic

½ poblano pepper, seeds removed and diced (If you like it a bit spicier, use one diced jalapeno instead. I’m a spice wuss so poblano it was!)

1 medium tomato, cored, seeded and diced

1 small red onion, diced

¼ C cilantro leaves (loosely packed)

Juice of one lime

Salt and pepper, to taste

• Place cilantro in food processor and pulse until finely chopped.

• Add garlic and pulse until finely minced and completely combined with cilantro, then set aside.

• Slice open avocados and remove pits and skins.

• Add avocados and lime juice to food processor, then process until avocado is roughly processed,

with some large chunks remaining.

• Add cilantro and garlic mixture to the avocado and pulse briefly to combine.

• Add poblano pepper and onion, and pulse to combine.

• Add tomato and pulse lightly (you don’t want to over-puree the tomatoes).

• Add salt and pepper as desired.

Grilled Cheese Sandwich

2 slices of bread of your choice (I used Ezekiel bread and it worked great.)

½ small red onion, sliced into long strips

2 cheese slices (I used one each of pepper jack and smoked gouda. The Whole Foods 365 brand is organic and delicious.)

Butter

Salt, pepper, and paprika to taste

• Heat a small stainless steel skillet over medium heat, and add a drop of vegetable oil

• Add the onion slices and heat until translucent

• Reduce heat to low. Add salt, pepper, and paprika, and stir gently with a wooden spoon

• Continue heating until onions begin to stick. Add a small amount (no more than a few tablespoons) of water and stir, scraping the pan until the water has evaporated.

• Remove onions from heat and set aside

• Heat a cast iron griddle over medium heat

• Spread a thin layer of butter on one side of each piece of bread

• Spread a layer of guacamole on each slice

• Top with grilled onions, as desired, and place a slice of cheese onto each piece of bread

• Grill until golden. Remove from heat and enjoy!

    Grilled or sauteed onions, OMG I AM OBSESSED – they’re just sooooo flipping good 🙂 And I can imagine them being OUT OF THIS WORLD On this grilled cheese! PS: CUTE new layout!!

    I’m definitely a grilled cheese fan! I love avocados too and those are always on my sandwiches. Never thought to make guacamole solely for the grilled cheese though, so I’m curious to try this, especially with the onions!

    YUM!! Coincidentally I had a grilled cheese for lunch – I wish I had thought of adding guac & sautéed onions. It’s like a grown-up grilled cheese. 🙂
