I love mail. There’s something about getting letters and packages that makes me so excited. It feels like opening a present. Today when I woke up I had a little package waiting for me on the kitchen table.
Clif ran a promotion on Twitter a few weeks ago offering up 5000 free peppermint stick bars to their followers. Has anyone else tried this flavor yet? I love Clif bars but am not the biggest fan of peppermint. (I’m a spearmint girl.) I’m surprising myself and slowly warming up to the taste though, so hopefully I’ll like this! If not there’s always my go-to Chocolate Dipped Coconut Luna bar. It tastes just like a Girl Scout Samoa cookie!
After going and doing the school thing for a while I came home feeling snack-y.
I just got these Flackers crackers in the mail to try. They’re made of flax seed and soy and come in many different flavors. This one was the savory flavor, and it tastes so good!
It tastes even better dipped in hummus, but then again, what doesn’t?
I rounded out my snack with a Turtle. I love that they come in individually wrapped packages thinking it will dissuade people from eating more. While I was good and had one at the time I still had two after dinner. My sweet tooth is definitely back with a vengeance.
I headed back to school for a few more classes and managed to get my spring schedule all ironed out! I have two classes on Friday but my Mondays are free until 6:30 at night. That seems pretty sweet to me!

I was also excited for dinner tonight. As delicious as last night’s tortelloni was I was still craving gnocchi in a serious way. I’m stubborn. And while scouring the Wegmans shelves today I finally found what I was looking for.
Whole Wheat Gnocchi!
This roasted red pepper and hummus gnocchi with pesto and cheese recipe was created by me simply playing around in the kitchen. I had a lot of fun making it and hope you enjoy it as much as I did!
Ingredients:
1 red pepper
1 yellow pepper
Extra virgin olive oil
1 package gnocchi
1/4 cup roasted red pepper hummus
2 tablespoons tomato pesto basil sauce
1 large handful mozzarella cheese
Makes three servings.
Go ahead and chop up the peppers into thin slices while the olive oil is warming up on the pan.
Add the peppers to the pan and stir until they begin to soften.
Mmm gnocchi how I’ve missed you. Once the peppers are starting to brown go ahead and add in your package of gnocchi.
Add the hummus to the gnocchi and peppers and stir thoroughly so everything is evenly coated.
Add in your tomato pesto and thoroughly mix so it is everything is again evenly coated. Cook for about five minutes (or until your gnocchi start to ligthly brown), stirring continuously.
Top with mozzarella cheese and mix throughout. Remove from heat.
Your gnocchi are going to be one cheesy, gooey, slightly crispy pile of yumminess by this point.
Serve and enjoy! It was exactly what I was craving and so so good! I normally use a recipe when I cook so it was a big change and lots of fun just playing around and seeing what came together. I am so glad the result was delicious, and so excited to get to share the recipe with you!
Andy was all up on this gnocchi. I love when he pops his little head up like this to see what’s going on at the table. He has such long legs!
Bailey, for once, decided beauty sleep was more important than food and conked out in the middle of the living room floor. Priorities.
I think I’m going to follow Bailey’s example and catch up on some sleep myself. I just got off a long three-way phone call with two of my best friends, which is why this blog is being posted later tonight. It is so great catching up with people that mean the world to you, who can make you laugh hysterically and feel like no time has passed since you were all together, watching Greys Anatomy and eating Hershey Bars. 🙂

so I’ve been reading your blog a bit, and not only does this recipe sound delicious…it also makes me incredibly hungry!
anyways, i wonder how the gnocchi would taste with a different kind of hummus. maybe a future endeavor? here are some ideas from the sabras website

i don’t know if you like spinach and artichoke, but that hummus sounds amazing and you could saute spinach and onions [maybe artichoke hearts too?!] , and then top with Parmesan cheese. just a thought!

Ohh that is such a good idea! I LOVE Sabra hummus, its my favorite and the brand I normally buy, but Wegmans just started stocking 32 ounce hummus tubs and I thought it was more economical to get that than a 10oz sabra tub with how fast I go through hummus. ;p Spinach and artichoke is my favorite sabra flavor, that is such a great idea to saute spinach, onions, and artichoke hearts with it. I think that will be my next pasta endeavor. Thanks so much! 🙂
