Hey guys! I hope you had a wonderful weekend and a happy St. Patrick’s Day. Erin Go Braugh! (Can you tell I’m Irish?) Josh and I had an awesome weekend. Here are some of the highlights:
Josh’s grad school program has an annual First Year party where the first years throw a costume party for the whole program. They pick an overall theme that is kept a secret. Each cohort is told their specific theme but not how it relates to the overall theme. Josh’s year was soup-or-salad. Josh and I decided to be salad forks and soup spoons. We had a lot of fun. 😀
The first year’s theme was superheros, the second year’s theme was superlatives, the third year’s theme was supernatural, the fourth year’s theme was supersized, the fifth year’s theme was super (soup-or) salad and the faculty’s theme was superfluous. The overall theme was Super. I thought this was such a cute idea and loved how into the costumes everyone got. It was such a fun party.
Lily and Pierce went as a carrot and ranch dressing. I thought this was so cute.
There was so much food! Not pictured, a delicious pumpkin lasagna that I helped devour.
Josh and I had fun this weekend starting to dig into this book. I’m going to be blogging about it in more detail but I love how it’s a newlywed book about preparing for marriage together and talking about tough issues and hard topics before they even arise or become a problem. I am not a relationship expert but as someone who is in a very happy relationship the most important thing I’ve discovered for a healthy relationship is communication.
Josh made the Trader Joe’s guac kit and it was a huge success. We realized after making it that a squeezed lime keeps the guacamole from going brown for days. I feel like we’ve discovered the super guacamole secret.
We made guacamole and veggie sandwiches with a huge side of brussels sprouts.
And guacamole and egg sandwiches. Store made guacamole is great but oh man fresh is so much more delicious. We’ll definitely be doing this more in the future. It takes all of five minutes.
Josh and I went to a dinner party with Pierce, Lily, Nicole, and Mike. I was so excited for the six of us to get to hang out over good food.
We started off with garlic bread and salad.
And stuffed mushrooms. Oh man are these good.
Lily made a delicious veggie lasagna for us that had such great ingredient combos. I never knew artichoke hearts and peas could not only work in a lasagna but taste amazing!
We ended the night with blondie brownies and ice cream. Brownies and ice cream is one of the best combos ever.
St. Patrick’s Day Josh and I kept it low key and watched PSU’s TED X live stream from home and ordered veggie boxties from the Irish restaurant downtown. It was a wonderful end to a fabulous Spring Break.

hey erin!! its pinksage from LJ/SG ive been lurking but never commented but just wanted to say homemade guac is THE BEST! you should look up “perfect 10 guac”. it literally really is perfect, 10 ingredients 🙂 i got the recipe from a youtuber and it has never failed me. loved the theme of the party very creative & looks like lots of fun! the pumpkin lasagna spuds amazing… I’ll have to look up the recipe. anywhoo keep up the good work w your site, I almost always find myself clicking away on your old posts 🙂

We had a low key St. Patrick’s Day too. Stayed home, watched tennis, ran long, ate vegan sliders (very good by the way).
The first year party looks fun. Cute costume!

The highlight of my weekend was going bowling for my friend Mo’s birthday. Even though I was horrible we had a blast. The costume party looked like so much fun. I love how everyone got dressed up!

I usually make a corned beef and cabbage with potatoes and carrots and Irish soda bread, but did not get myself together this year, oh well, next year.
I love homemade guac, I just learned the lime trick a year ago 🙂

It’s such a great trick! It works so much better than keeping the pit in the guacamole.
