Hey everyone! I hope your Tuesday went well! Mine flew by, school is in full swing and that means lots of projects and homework!
I woke up early this morning to get started on a project due tomorrow and after a while of working decided it was time for breakfast. When making my breakfast burrito I found some of the biggest grape tomatoes I have ever seen! They were huge, and Andy was hungry intrigued.
After breakfast I headed to finance and then aerobics class. Today in aerobics we did a half an hour at 75% of our maximum heart rate. The gym was playing good music and I was feeling much better so I could really make an effort and get a great workout in. Last Thursday’s aerobics class was a different story. I was on my first day of antibiotics at the time and could barely work the bike machine at a low speed, much less run on a treadmill like I did today. Its amazing what a different workout you can get depending on how you’re feeling. I’m so glad to be feeling much better!
After finishing up my workout I headed back to the computer lab to get some more work done. Check out this little sign I found posted in the business building.
I long ago accepted I go to school in the boonies but seeing things like this still make me feel secondhand embarrassment. Just in case you’re wondering, I do not wear camo. ;p
I came home ravenous after hours in the computer lab. Its funny how its called group work, yet group work is never actually group work. Its usually one or two people doing the work for the group. I digress. I snacked away my frustrations with some pretzels and pesto while I decided what to eat for an actual meal.
Bailey kept me company while I made dinner by laying in the middle of the floor. She likes to be in the middle of all the activity! ;p
I ended up making my new obsession. Toasted whole wheat English muffin + almond butter + bananas = yum! So filling and exactly what I was craving.
Eating breakfast at 11 and then having my next meal at 5:40 meant around 9:30 I was hungry again. I’ll call this second-dinner. I was really excited to try and recreate Josh’s breakfast from Romeos Cafe this past weekend in New Haven.
The original version had fruit, cream cheese, honey, and nuts rolled up in a breakfast tortilla. Because the tortillas in my house are spinach and pesto flavored I thought I’d substitute in another English muffin. They are seriously becoming an obsession.
The result was pure deliciousness. I will definitely be making these again! The cream cheese ties everything together perfectly and the nuts give the food some staying power.
I spent the rest of my night catching up with these girls. Keeping Up With the Kardashians is such a guilty pleasure. I thought the wedding was visually stunning but I was a little sad by Kim and Kris’s relationship. He kind of seems like a jerk and they were arguing so much days before their wedding.
Call me old fashioned but I don’t think you should settle for anything less than the fairy tale. And that’s getting to be this couple, still happily in love, still together after a long life lived together, one filled with shared memories and emotions and experiences.
Question of the day: What’s your guilty pleasure TV show? I have way too many, basically everything on E!, and Bravo, and I am obsessed with Gossip Girl!

Hi Erin — (Sadly) I am also a little too obsessed with most things on E and Bravo. Uncle Rich cannot understand this at all! 🙂 He definitely does not see the entertainment value in these shows. I am also a HUGE fan of the Good Wife and Modern Family. Thank God for DVRs though because I usually fall alseep right before the end of one or the other or both and then watch it the next day. Haha aww poor Uncle Rich! Josh doesn’t really like the shows either, he thinks theyre ridiculous but is so sweet to put up with me watching and talking about them anyways! He draws the line at Twilight, he says if I really really wanted to see it with him he would go, but otherwise he’d prefer if I saw it with a friend. I wouldn’t do that to him, I already have plans to see it with a group of girls. I think the movie will be much more appreciated that way! ;p
