Today didn’t go exactly how I wanted it to go. I started my day with a disappointing email and ended with my Macbook laptop battery dying a sad death at five years old. My dad was so sweet to let me type this post from his laptop while I am currently computer-less. Despite the setbacks I am incredibly lucky and have already found doors opening where others were closed. I spent some time on Pinterest tonight finding inspirational quotes and thought I’d share some of my favorites with you.
I cooked with No Oodles!
When Josh and I visited Patricia in DC she was so sweet and sent us home with some of her favorite foods! The joys of living near a Whole Foods! No Oodles have no calories, no fat, no carbs, no gluten, no soy, and no sugar. They are basically a blank canvas for your food, simply acting as a filler. They come in a lime juice concoction that helps them stay fresh that you’re supposed to rinse thoroughly before cooking. They’ve already been pre-cooked so they simply need to be heated. I had no idea what to expect from these things, but Patricia raved about them so I was excited to give them a try.
I started off by sauteing some garlic and olive oil in the pan. I then added in tomatoes, an orange pepper, three carrots, and a handful of fresh mushrooms. Once they began to soften I added in a package of pressed tofu and a quarter of a cup of Diane’s homemade spaghetti sauce. The final addition to the pan were the No Oodles. This was all done in a matter of minutes. When everything was heated I sprinkled some handfuls of mozzarella cheese on top and stirred it in.
I was worried that cooking with mushrooms, tofu, and No Oodles would make for a very bland dish. They’re all ingredients that tend to take on the flavors around them. I was so surprised with how flavorful the dish was, how fresh the veggies tasted, and how much the No Oodles tasted just like eating pasta! I was so happy I made a lot because now I have leftovers for tomorrow! This was an incredible dinner.
I’m going to wrap this up and get in a pilates workout before packing for Josh’s parents. I have a geology field trip tomorrow that involves driving all over Central PA to look at rocks in the morning, then a midterm, and then I’m driving to Josh’s. We leave for New Haven, CT Friday morning and I can’t wait! I’m so excited to get to spend time with Josh’s family. They are amazing and so much fun to be around. Spring Break could not come at a better time!

Wow, those look so good. I am a HUGE pasta eater… my mom is Italian so it makes sense. I could never go without ANY type of pasta or noodle in my diet! I’m gonna give these a try soon.

wegmans carries no oodles. i had heard mixed reviews about shirataki noodles (some people say that they’re really slimy and the smell when you first open the package is overwhelming), but i think i’ll pick some up next time i’m at wegmans.

I wish my Wegmans carried No Oodles! Ill have to check a bigger Wegmans. Oh they’re absolutely slimy and smelly when you open the package, I wouldn’t say overwhelmingly so though. I cut open the package, dumped them immediately into a strainer and rinsed thoroughly with cold water. Within seconds the smell was gone and the noodles felt a lot better. Id love to hear what you think of them!

check the nature’s marketplace area. the wegmans right around the corner from my house is pretty small, but they surprisingly carry them (according to the website, anyways). next time i’ll go, i’ll grab a pack and let you know what i think! i’m thinking i’ll probably add them to a stir fry.

Yes, they’re similar to the tofu shirataki noodles! They have a really good consistency that when you’re eating feels like youre eating real noodles, instead of smily little worms or something. They’re really good and I’d definitely recommend them!
