I love eggs. They’re a staple in my diet and one of my absolute favorite foods.
They’re also nature’s multivitamin. Long known as the standard for protein, they’re also a rich source of selenium, vitamin D, B6, B12 zinc, iron and copper.
One of my favorite ways to enjoy eggs is scrambled on toast with a spread of cream cheese and a sprinkle of fresh chives.
It’s a satisfying way to start my day and a meal that takes all of five minutes to make. As I always seem to be short on time lately, I appreciate a breakfast that I can eat quickly before dashing out the door. Truthfully, some nights I get home from work so tired that eggs on toast is my dinner as well. 😉
It’s easy to think that an egg is an egg is an egg. But there are some very big differences between the various eggs out there on grocery store shelves.

Every time we go to the store and make a purchase, we’re casting a vote. We just have to decide what matters most to us to vote for. It’s funny, because when push comes to shove the reason I buy organic is for my health over the health of the animals I’m eating. Josh is the exact opposite. He’d eat antibiotics and hormones any day if that somehow let the cows that made his milk get to see sunshine, walk in the grass, and live a life without suffering. Because of this, we buy products that are both good for us and the animals that nourish us. It’s what is important to us.

I absolutely agree with this! I’m glad you have found a good source of eggs! We have had chickens in the past, and plan to get them again this spring. I have never thought to put cream cheese on toast, but this looks absolutely amazing! We are definitely an egg loving family 🙂

That egg on toast looks super delishhh and I now know better than to just grab my tray and head home to enjoy without knowing where the egg’s moma lives and how she was reared before she lost her lil egg! now am sad awww!
Oh well it was created as part of the food chain and I would be lying to say I will stop eating them. Lovem too much!
