Happy Cyber Monday! Did any of you find good deals today? I wasn’t really looking for anything but I’m considering a Sonicare electric toothbrush (for $15!) or a 2012-2013 Moleskine planner from Barnes and Noble (also on sale for $15). I use a Moleskine every year so I figure I may as well get one early for my last year in college! I have until midnight to decide on both of the items so I’m not rushing it.
Today was good for two reasons. 1) I didn’t have school today because its the first day of hunting season and I live in the middle of the boonies. Its the most ridiculous reason to have a day off from school but I’ll take it. And 2) I didn’t have to work today! Working Wednesday, Friday, Saturday and Sunday was a lot of fun but retail during the holidays can be extremely tiring. Despite having a lot to get done for school today (finals are next week!) I spent most of the day napping, lounging, and vegging. I needed rest.
Working during the holidays means working some very odd hours. My eating schedule was all over the place. I remember eating a grilled cheese sandwich on my lunch break at work, at 5am, and thinking how surreal an experience it was. I managed to get some pictures of my random eats this weekend and thought I would share them with you!

Nachos! I baked chips, cheddar cheese, and black beans in the oven at 350 degrees for ten minutes. I then topped with a homemade guacamole recipe that was super easy. One avocado + one tablespoon lemon juice + 1/8 teaspoon salt makes for the easiest guacamole when you’re in a rush.
A veggie wrap from Brennans at the mall. I was pretty bummed they changed their menu around. No more yogurts or egg salad and all sandwiches are now served with chips. The sandwich was still good but I think that was my last trip there. Its the only veggie option on the menu anymore and they took away the veggie cream cheese on it and replaced it with ranch dressing. Its not the same.
I went to Subway another day and got the veggie patty Josh introduced me to. A whole wheat sub with provolone cheese, spinach, onions, tons of sweet peppers and red wine vinaigrette are my Subway toppings of choice.
I’ve had a bowl that’s looked just like this every day this weekend. With my parents on vacation, someones gotta finish the Thanksgiving leftovers! Stuffing + mashed potatoes + sweet potatoes + green beans with almonds probably explains the carb comba I’ve had for the past few days.
If that bowl of carbs isn’t responsible for my carb coma, this pumpkin pie probably is. It is just so darn good. My Aunt bought it from the Amish and I don’t know what they put in it but it is made of pure deliciousness and yumminess. I wish I could get the recipe, I’ve had some amazing pumpkin pies in my life but nothing can compare to this one. Lucky for me my parents left me with the entire pie to finish! I’ve been enjoying a slice every night. 😀
