So this week is midterm week. I realized this week is midterm week yesterday, on the first day of midterm week. Because of that my days have been filled with a lot of studying and finishing up projects and assignments. Josh and I are leaving for Connecticut to visit his parents this Friday so I want to make sure I have absolutely everything done beforehand. I woke up extra early this morning to finish some homework and start studying for tomorrow’s econ test.
Andy got a new toy yesterday that’s nearly as big as he is. He loves it. He does not love economics homework that prevents me from playing with him with his new toy.
Work took a while this morning so today’s breakfast was actually a to-go breakfast. I made a breakfast burrito but had no time to eat it so I wrapped it in aluminum foil and ate it in finance class.
After finance I headed to the gym for aerobics class where I saw this little sign posted outside the door:
I loved it. It was that little kick I needed to make sure I rocked it out in class today. And wow was today a challenge. 35 minutes at 90% of my maximum heart rate. I really felt it.
After class I headed back to the computer lab to get some more work done. Can it be this weekend yet? By the time I got home I was starving.
I ripped up some romaine lettuce, added some walnuts, strawberries, onions, and topped it with Wegmans white balsamic vinaigrette. So good!
Bailey loves strawberries. Andy could care less, he wanted Bailey to go play with him and his new toy.
After salad it was time for the main course!
Pizza! Diane is amazing and cooks a homemade meal nearly every night. She also works full time as the director of nursing at my school and is enrolled in a PhD program. She’s pretty much superwoman. But even superwoman needs a break now and then, and she had some schoolwork to catch up on so she asked my dad if he would mind picking up pizza for dinner. He didn’t object, Tuesdays are $6 pizza nights at the pizza shop down the road from me. There are few things my dad loves more in this world than a good bargain. (The apple doesn’t fall far from the tree I guess! ;p)
The pizza from where we ordered is good but not great. I spice it up a little with my favorite pizza topping, crushed red pepper! I don’t know why I love it so much as I’m generally a baby about spicy foods but it makes pizza taste ten times better and adds so much flavor.
My pizza dabbed with a napkin to soak up the excess grease (does anyone else do this?) and covered with crushed red pepper, all ready to be eaten.
Andy momentarily forgot about his toy to check out the pizza situation.
Bailey could smell the cheese.
When Andy realized he wasn’t getting any pizza he went back to playing with his toy. It makes him so happy.
After dinner my dad and I headed over to Starbucks for some coffee. He got a vanilla bean frapp.
And I mixed it up and got a salted caramel mocha with chocolate drizzled in the cup with skim milk and no whip. It was good and enjoyed while catching up with my dad. I love how close we are and how fun it is to go on little father-daughter dates. I also had a salted caramel sweet square while we talked that I totally forgot to take a picture of. The best part about it was that it was free! My Starbucks offers a taste testing on Tuesdays and Thursdays from 5-7 and always offer a different food or drink option to try. While I enjoyed it I don’t know if I will order it in the future. Maybe its the fact it was paired with a salted caramel mocha but there was simply too much salt going on.
When we got home I found this little guy, still begging for someone to give him and his new toy some attention. I think its time I go do that! Have a great night everyone!

your salad looks sexual. hahaha. i’ve always wanted to add strawberries to a salad or at least try one already made but i’m always afraid i’m not going to like it. maybe it’s because i think the sweetness of the strawberries will offset everything else. i don’t knoww buttt i love red pepper, it’s my favorite and i ALWAYS wipe the grease off my pizza. it’s disgusting how much there is. i’ve recently been thinking about going vegetarian because it’s SO MUCH healthier for you. i don’t eat that much meat anyway so i feel like it wouldn’t be that difficult. thinkkkk i’m going to give it a try! with all of the food you post it’s really inspiring. thanks!

The salad was awesome!! I love strawberries in a salad, if you like sweet vinaigrette on your salads I think you will love it. It especially tastes good with feta cheese, I just skipped it today because I knew I was having pizza. They really blend well!
Oh thats awesome you’re thinking about giving up meat! Everyone’s different and should do whats best for their body but its definitely been great for me! I never really ate much meat besides chicken anyways so it wasn’t too hard of an adjustment for me. Just make sure you get enough protein and healthy fats! And good luck, I would love to hear how it goes for you!
