Starting your day with pancakes is without a doubt one of the most delicious ways to start the day.
Having your fiance make them for you for breakfast is even better! 😀
This past weekend Josh showed me the all natural blueberry pancake mix he just got and asked if I would like to try it. I assumed it was a rhetorical question. ;p
He also pulled out a bottle of Razz’s Shagbark Hickory Syrup to top the pancakes with. The syrup is made by a little family owned company in PA. After the owner’s kids graduated the husband and wife were looking for something to do that involved nature and home grown produce so they decided to make syrup. Instead of making maple syrup, which is made from sap, their syrup is made from the fallen bark of hickory trees. They collect the bark after it falls, boil it down, and mix it with sugar and water. It doesn’t harm the trees and is an environmentally friendly process that is all natural. Their syrup does not have any artifical chemicals or colorings and it never goes bad. Josh got talking with one of the owners at The People’s Choice Festival of Pennsylvania Arts and Crafts in Boalsburg, PA and loved how passionate they were about their product and how evident it is that they put a lot of care and time into what they do. I was so excited to get to try the syrup.
Josh was amazing and photographed the pancake making process. It was a simple transfer from bowl,
to pan,
to plate! The pancakes were fantastic and the hickory syrup took them over the top. It was sweet but not overly sweet, with a lot of depth to the flavor. I’m a HUGE fan!
Josh and the owner got talking about recipes and he gave Josh a recipe for salad dressing I thought would be fun to share. It sounds amazing, and Josh already said he’s making it asap. I can’t wait to try it out.
Razz’s Balsamic Hickory Salad Dressing
3 tablespoons Shagbark Hickory Syrup
1/3 cup balsamic vinegar (could sub in raspberry balsamic instead of vinegar)
2 tablespoons olive oil
1/4 teaspoon dried basil
If you try it I’d love to hear what you think of it. And this is what I get for writing a post at 2am, I am now craving pancakes and syrup!

I am a pancake lover too! Always healthify them with flax, chia, quinoa flakes, wheat germ and wheat bran. I love to get a little extra nutrition in my breakfast treats!
Erin says
Ohh I love bran pancakes! I never thought to make them with chia but that sounds amazing. I’m going to need to try that, thanks!

favorite breakfast food [that i usually make for dinner 🙂 ] would have to be a huge omelet! with as many veggies and cheese i can fit into it 😀
also, i was trying to think of a good salad to have the dressing on..have you thought about:
toasted walnuts, goat cheese, hickory smoked bacon, mixed greens and maybe dried cranberries or cherries? if you wanted to make this a meal, maybe try adding grilled chicken that has a sweet/savory rub or marinade on it?
Erin says
I loovee omelets! I haven’t had one in a while and I’m craving one now.
That idea for a salad to go with the dressing sounds amazing! I’d love to hear what you think of it! I’d have to make some substitutions being a vegetarian but I hear people rave about bacon in salads.
hannah says
do you think you these might work?

i have yet to find a really good chicken substitution, but i read some good reviews on these!
Erin says
Ohh I’d be curious to try them! I don’t eat a ton of fake meat products but some I really love, and those sound good!
Leah @ Chocolate and Wild Air says
Yum, those pancakes look killer!! I usually go for some kind of big, gooey, cheesy omelette – I love pancakes and waffles, but I only want a bite or two. Sometimes my parents and I get an order for the table just to split, like dessert!
Erin says
I love that idea! They kind of are like dessert. Options for breakfast foods are definitely some of the best!
Tom and Judy says
So glad you enjoyed our hickory syrup. It was a pleasure meeting Josh. Maybe next year we will see both of you at the festival. Thank you for the kind words and remember to check our website for our retail outlets.
Erin says
I definitely want to visit the festival next year and would love to meet you in person. Josh and I absolutely loved the syrup, thanks for making such a great product!
Abby @ Abz 'n' Oats says
