Chili is a food that has a reputation for taking a loooong time to make. You’re supposed to simmer everything over a low heat for hours so that the flavors all blend together. Those who know me know that I do not have time for that. That’s why I’m so excited to share this 15 minute vegetarian chili recipe with you!

This recipe cuts out almost all of the traditional chili cook time through a nifty trick. By cooking the beans with just garlic, onions, peppers, and spices, the beans begin to open up and dry out slightly. Then, by adding a zesty, flavorful sauce (looking at you La Morena Mexican Red Sauce), the beans rehydrate and absorb all of the delicious flavors in the pan. The flavors come together in minutes, rather than hours.

15 Minute Vegetarian Chili Recipe Her Heartland Soul

15 Minute Vegetarian Chili Recipe

Serves 4-6

Ingredients

1 can chick peas
1 can red kidney beans
1 can black beans
1 medium red onion, diced
6 garlic cloves, minced
1 large red bell pepper, diced
1 La Morena Chipotle Chile in Adobo Sauce, plus 1 tbsp adobo sauce
1 can La Morena Red Mexican Sauce
6 ounces diced tomatoes (with juice)
2 tbsp chili powder
2 tsp cumin
Salt and pepper, to taste
1/4 cup chopped fresh cilantro
Shredded cheddar cheese, for garnish

Directions

Heat 1 tbsp olive oil in a large cast iron skillet over medium heat
Saute the onion, garlic, and bell pepper with a pinch of salt until everything is soft (about 5 minutes)
Add the beans and stir to combine
Dice one La Morena Chipotle Chile and add it to the pan, along with a tablespoon of the adobo sauce
Season with chili powder, salt, pepper, and cumin
Let cook, stirring occasionally, for five minutes, or until beans get slightly sticky
Add the La Morena Red Mexican Sauce and the diced tomatoes, stirring until everything is evenly combined
Let cook, stirring occasionally, for five minutes
Remove from heat and stir in the chopped cilantro
Serve immediately, garnish with shredded cheddar as desired
