Wow you guys. This has been a week. Josh’s parents are in town visiting, work at my new job is picking up, it was Josh’s birthday on Tuesday, and I currently have this thing with my voice that is making me sound like Darth Vader (Fingers crossed I’m not getting sick!). Long story short, something had to give, and this week it was my blog.

To further mix things up, this Friday I’m not sharing a Friday Favorites, but instead a 15 minute pasta recipe, because truthfully it’s much easier to skip on personal posts than paid contractual commitments. 😉 That being said this recipe is delicious, easy, and super quick. I hope you try it out and that you love it if you do!

As I mentioned before, Josh’s parents arrived in Omaha last Saturday to stay with us for the week. Josh’s mom hates flying and traveled all the way from Connecticut to visit, so I wanted to have something sweet waiting for her when she walked in the door. I don’t know about you, but not much is sweeter to me than a glass of wine and some decadent snacks after a long day of traveling.

We picked up a bottle of Tom Gore Cabernet Sauvignon and the Pepperidge Farm Chocolate Cookie Collection at Walmart. Josh is a big fan of Tom Gore and I am all about the Milano Cookies.

Okay more truth time, this is actually how the table looked when Josh’s parents arrived. I can’t say no to turkey wine bottle covers. 😀

We also had lunch waiting for them on the stove. Debbie gets so nervous she can’t eat before a flight, so I wanted to have something that would be light on her stomach but filling at the same time. From start to finish this pasta recipe was done in 15 minutes thanks to Barilla Pronto pasta. The pasta doesn’t need to boil or be drained which saves a ton of time and allows me to cook a full pasta meal using only one pan. This dish was a hit with the whole family. I hope yours loves it too!

Barilla 15 Minute Pasta Recipe

Ingredients

  • 1 box (12 oz) Barilla Pronto Penne Pasta
  • 14 oz crushed tomatoes (one can)
  • 1 Tbsp tomato paste
  • 1 Tbsp + 1 Tsp extra virgin olive oil
  • 1 red bell pepper, diced into one inch chunks
  • 1 green bell pepper, diced into one inch chunks
  • 1/4 cup crumbled feta cheese
  • 3 cloves of garlic, finely diced
  • 1 Tsp dried basil
  • 1 Tsp dried oregano
  • 1/2 Tsp Red pepper flakes
  • Salt and pepper (to taste)

Directions

  • Pour the dry Barilla Pronto pasta into a wide deep dish skillet and then pour in three cups of cold water
  • Place over high heat, stirring occasionally, until all of the liquid is absorbed (about ten minutes)
  • While the pasta cooks, heat 1 tsp of olive oil in a medium skillet and add the diced peppers. Season with salt and pepper and cook for approximately five minutes, stirring occasionally
  • Add the garlic to the peppers and let cook for another two minutes, or until the garlic is fragrant
  • Remove the peppers from the heat and stir them into the pasta
  • Pour in the crushed tomatoes and tomato paste, and add the remaining olive oil
  • Season with the herbs and spices (basil, oregano,red pepper flakes, and salt and pepper)
  • Add in the feta cheese and stir everything until the pasta sauce is thoroughly mixed into the pasta
  • Let simmer for approximately 2-3 minutes, or until sauce is hot
  • Remove from heat and serve!

    My family and I are huge fans of Barilla pasta’s and I stick up when I see them on sale, so I have’nt needed to buy more. As soon as I need more Penne, I’m going to give their quick cook pasta a try. Thanks for sharing and your table is lovely.
