It’s time for March’s Three Cooks One Kitchen!
In case you aren’t familiar, Three Cooks One Kitchen is a monthly cooking installment Joanna, Hannah and I do. We pick one of our places to get together and a food theme we want to focus on. This month was going to be at Joanna’s house, but due to her not feeling well the day of, we decided to do our first Three Cooks Three Kitchens post. We each cooked at our own house and are now sharing each of our experiences on our blogs today. While we plan on doing the traditional one kitchen together next month, we may have to do separate cooking again the month after when Baby Murnan #2 arrives! 😀
Hannah came up with the idea of doing a “brinner” theme for this month’s challenge. She found this amazing sweet potato breakfast burrito recipe, that is super simple, easy to customize, and freezer friendly. Sign me up!
You start off by making your veggie hash. This will make your entire house smell amazing.
A word of caution that if you let your veggies cook for too long they will turn from mash to mush. You won’t be able to make as many burritos with the veggie mush, but they will taste absolutely incredible.
Once the mush mash is done, you get to work on scrambling up the eggs.
And then it’s burrito assembly time! You can put whatever you want as toppings. Josh did cheese and I went with fresh guacamole.
If you’re going to freeze some of these for eating at a later date, I recommend subbing cheese for guacamole. It’s much more freezer friendly.
Once you roll up your tortilla, toast to eating breakfast for dinner while in PJs with your dining companions.
It was such a tasty burrito. And if you’re watching carbs, you can easily skip the tortilla and have a sweet potato bowl.
I missed cooking with my girls, but really enjoyed the delicious dinner with Josh.
