Bruschetta Cheese Bites with Flackers

Josh and I have been going to a lot of parties this summer. The events are usually potluck style with everyone bringing meals and snacks to share. I’m the type of person that likes to eat throughout the night. Because of this, I know I need to bring some nutritious snacks or else I’ll be the one hoarding the chip bowl by the end of the night. So I set out to create a healthy party recipe featuring Flackers crackers and I’m so happy with the result.

Bruschetta cheese bites! They’re savory, they’re salty, they’re cheesy, they’re creamy, they’re crunchy, and they’re oh so yummy. They’re the perfect appetizer for a party or for a solo snack. I may or may not be planning on eating them for dinner tonight. 😉

Before we get into the recipe let’s talk about the backbone of this snack: the crackers. Flackers were created by Dr. Alison Levitt who believes that good food is wise medicine. She wanted to encourage people to eat more flax seed, and offer people a tasty treat at the same time. I love how crunchy and flavorful they are. All their flackers are organic, non-GMO, vegan, nut free, gluten free, and raw.

I love how she’s all about minimal ingredients. The ingredients list for the sun ripened tomato and basil crackers I used is: organic flax seeds, organic sun ripened tomatoes, organic apple cider vinegar, organic dried basil, and sea salt.

I’ve been eating Flackers for years and I have loved watching the company grow and expand over the years. What started off as a small business is now a company that’s available across the nation in big grocery stores (Hyvee for all my Midwest readers!) and national health food stores (I’m looking at you, Whole Foods!).

A close up of the flax seed goodness. Flax seeds contain a lot of things that are very good for you, including Omega 3 fatty acids, lignans, and fiber. Research indicates that flax may reduce risks of certain cancers as well as cardiovascular disease and lung disease. That sounds pretty dang good to me!

Okay, back to the recipe…

Bruschetta Recipe

  • 4 medium tomatoes
  • 1 clove garlic
  • 1/4 cup fresh basil leaves
  • 1 medium red onion
  • 1 lime (for zest)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste
Peel and quarter the onion and place in your food processor.

 

Add the clove of garlic and process until everything is roughly minced.

 

Cut the tomatoes into quarters and remove the cores and seeds, then place in the food processor with the garlic and onion.

 

Zest half of a lime and add it to the food processor.

 

Add the basil leaves, salt, pepper, vinegar and oil, and pulse briefly, until tomato is roughly minced, and everything is evenly incorporated.

 

Transfer to a bowl.

Roasted Garlic Goat Cheese Spread Recipe

  • 1 container (5.3 oz) Stonyfield nonfat plain Greek yogurt
  • 1 small log (5 oz) goat cheese
  • 1 bulb garlic
  • 2 tbsp fresh thyme leaves
  • 1 tsp extra virgin olive oil
  • Salt and pepper, to taste
Preheat oven to 400 degrees.

 

Cut the top off of the bulb of garlic and wrap in aluminum foil.

 

Drizzle with olive oil, wrap tightly in the foil, and bake for one hour.

 

Remove the garlic from the oven and set aside to cool.

 

In your food processor, combine the yogurt and goat cheese.

 

Squeeze all of the garlic from the bulb into the food processor, and then add the thyme.

 

Season with salt and pepper, and process until everything is smooth.

 

Transfer to a dish, cover with plastic wrap, and chill for at least one hour.

 

Flackers Bruschetta Cheese Bites Recipe

1. Take a Flacker
2. Spread some of the goat cheese dip on it
3. Top with bruschetta
4. Place directly in mouth

I can’t even describe to you how good these are. I can only encourage you to try them yourself. You’ll be so happy you did.

    I love bruschetta and those crackers sound delicious. I have substituted tofu in the past for the cheese, so I think it would make a great vegan alternative.

    SO SO SO good! I could NOT have those FLACKERS in my house – I would eat that entire box in 5 seconds and then proceed to have an enormously AWFUL stomachache! THANKS FIBER! LOL!

    I love bruschetta! I’ve always wanted to know how to make it from scratch! My food processor is so big it feels like such a mission getting it out of the cupboard but I may have to for this tasty recipe!
