Brix has fabulous food, fabulous drinks, and a fabulous view. We made sure to get there early to make it for their happy hour specials.
As we were walking around we heard a man playing a cello nearby. It was so beautiful. I grew up playing the violin and always wished I could play the cello as well.
We had a second date night at Louie's Wine Dive. Their vegetable ratatouille was so good when I went with Ashley I knew Josh had to try it too. It did not disappoint.
I went to the Farmers Market for kale and left with a dark chocolate dipped cronut. It was basically heaven.
I still got the kale too. All this
+ this = some fabulous fresh kale chips. I always use Fitnessista's recipe and love it.
We also made a lentil and corn dish that was out of this world. One of my co-workers has a farm and brought in fresh corn for the office. We cooked half in this and grilled the other half on the roof over beers as the sun set.
We also made delicious guacamole. I've learned the secret to green guacamole days after you make it is lots of lime and a tight fitting container. After I snapped this picture I added in some tomatoes a different coworker grew and brought in for the office. I love how nice my co-workers are, and how Nebraska is home to such great local produce!
While at Whole Foods this weekend I got to sample flavored vodka made locally in Iowa. It's so crazy to me that Iowa is only ten minutes away.
This weekend was also the first local Omaha blogger meet up! I'm so glad I can say it's the first of many because hanging out with all of these girls was awesome. We met at Ingredient in Midtown Crossing on Sunday afternoon and had fun just spending time in the sunshine and chatting for a few hours. Everyone has different interests and hobbies but every single one of them is so nice and warm and fun to be around. Bloggers always seem to get one another. :D We're planning a meetup once a month and just got a Facebook group all set up. I think this is the start of great things! It's nice to have a busy social calendar as I'm settling into a new place, it helps keep me from missing home too much.
Food was definitely my secondary focus at this event but it was still absolutely delicious. I got the mushroom brie melt and it was so, so good.
And now it's time to get ready for another workweek. It should be a good one!
