If you're a peanut fan you will love this Thai Peanut Veggie Noodle Recipe. It's healthy, filling, and incredible tasty!
Thai Peanut Veggie Noodle Recipe
Makes 8 servingsIngredients
- 6 carrots (as thick as you can find)
- 3 large daikon radishes
- 1/2 C peanuts
- 4 assorted sweet peppers, cut into 1/2 inch slices
- 2 C broccoli florets
- 2 Tbsp fresh grated ginger
- 5 cloves garlic, minced
- 3/4 C creamy peanut butter
- 1/4 C fresh cilantro, roughly chopped
- 1/4 C green onions, finely chopped
- 3 Tbsp red curry paste
- 2 Tbsp plum sauce
- 1 tsp soy sauce
- 2 tsp sriracha sauce
- Fresh lime juice, to taste
- 2 Tbsp sesame oil
- Salt and pepper, to taste
- 1/3 C spearmint, roughly chopped
Recipe
- Using a spiralizer, grate the daikon and carrots into thin "noodles"
- Set the Daikon aside
- Bring a large pot of water to a boil
- Add the spiralized carrots and boil for about 3 minutes, or until slightly tender
- Drain, mix with daikon, and set aside
- In a small bowl, combine peanut sauce, 1 Tsbp sesame oil, plum sauce, soy sauce, and sriracha
- Slowly add cold water, stirring constantly, until mixture has reached a thick but pourable consistency
- Set aside
- In a large pot, heat 1 Tbsp of saute broccoli and peppers until slightly tender
- Add minced garlic and curry paste, and stir until completely incorporated
- In a small pan, heat the peanuts until medium heat, stirring occasionally for about 5-6 minutes, or until slightly brown and fragrant
- Set aside
- Add "Noodles" to the pot with the broccoli and peppers, stirring until the veggies are evenly distributed throughout
- Pour the peanut sauce over the "noodles" and stir thoroughly until completely combined
- Add the cilantro and green onions, stirring until evenly distributed
- Add the peanuts to the "noodles" and still until fully combined
- Continue cooking over medium heat for approximately five minutes
- Remove from heat
- Garnish with fresh lime juice and roughly chopped mint and serve immediately (It also tastes delicious chilled!)

I was in love with how this turned out. This would be a perfect dish to serve at a party with a Thai-themed menu. It's so delicious and so incredibly colorful. It will definitely impress your guests.
It will also impress your palate! There's so many wonderful flavors in this dish but peanuts are definitely the star. Peanut sauce has got to be one of the most yummy things.
