This lemon berry trifle is the perfect summer dessert. Made with angel food cake, a whipped lemon ricotta, and fresh fruit, this mason jar dessert is absolutely delicious and easy to make. It's ready to eat in less than 5 minutes!

I love cooking with the seasons and right now we are in the midst of fresh fruit season. Everything is so ripe and so delicious. Josh and I originally made this recipe a few months ago for dessert at home, and then decided it was the perfect 4th of July dessert. We'll very likely be making it a few more times before the summer is over. All the ingredients were bought fresh at Family Fare. They have some incredible deals on produce right now. Mason Jar Trifle Recipe

Ingredients

  • 24oz whole milk ricotta cheese (about 1 ½ regular size containers)

  • Zest of one lemon

  • ¼ tsp grated nutmeg

  • 4 tsp powdered sugar

  • 8 strawberries, tops removed and quartered

  • 8oz blueberries

  • ½ angel food cake, cut into 1-inch chunks

  • 8 mint leaves for garnish

Directions

  • Combine ricotta, lemon zest, nutmeg, and powdered sugar in the bowl of a stand mixer

  • Using the whisk attachment, beat on high for 30 seconds to 1 minute, or until ricotta is light and airy

  • In mason jars, place alternating layers of cake, berries, and ricotta crème

  • Top with more cream and garnish each trifle with two mint leaves
