Campus Holiday Cards
Today was my last day of classes for the semester! Finals start next Tuesday and then I only have two more semesters until I graduate. SO excited. Walking back to my car after aerobics today I got really excited seeing the Holiday Cards were up on campus. Penn College has a really cute tradition every year where all the clubs decorate a board for the holidays and then they display them in one of the quads. I always look forward to seeing them and thought I would share some of my favorites with you! :) It was so bright and sunny today. I loved it! I can't believe its December first! This year has truly flown by. On the eating front, for lunch today I used up the leftovers from last night's dinner and had a plate of rice, tofu, peppers, and guacamole. It looks disgusting but it tasted delicious! For dinner I used the other half of the tofu pack and made a tofu dipper salad with a side of nonfat greek yogurt and blackberries drizzled with honey. The recipe for the tofu glaze can be found here. I definitely ate the other five tofu pieces that couldn't fit on this salad after I had cleaned this plate. I'm convinced Greek yogurt tastes good with absolutely anything. I have not had one combination I haven't liked yet. So so good. And that's been my day! Time to get back to work on a project for school. I'll see you all tomorrow mid-afternoon with my Notes for November review and a new Do-It-Up December list!
